“Prosciutto Chicken”

Dear Friend,
I once made Prosciutto Chicken for you and it turned out horrible. I remember it was too salty and you made such funny faces, I couldn’t help but laugh. I make it again for you tonight to see if I have made it better. I certainly don’t want to disappoint you again. I thought it would be a good time to catch up with each other over dinner and wine. Just try not to laugh.

Wrap chicken tenderloins with a slice of prosciutto each and bake in 350 degree oven for 15-20 minutes, top with jar sauce and fresh parm then broil a few minutes to brown. Steam some green beans and place on top of a swoosh of ricotta cheese then top with finished chicken. Enjoy.
